The pork here is incredibly fresh and high-quality. You can tell immediately by the bright color and thick cut of the meat. Because it is so fresh, it stays incredibly juicy on the inside, with a natural, clean sweetness and no gamey odor at all. Each bite has a wonderful, tender chew. The high heat from the charcoal sears the outside quickly, locking in all the savory juices. It infuses the fresh pork with a rich, deep smoky aroma that you just cannot get from a regular gas grill.
