Sushi Koji in Seoul is a quiet triumph for anyone who, like me, seeks out omakase wherever they travel. From the moment you settle in, the warm, intimate ambience sets the tone for what unfolds, an experience as much about hospitality as it is about food. The service is attentive and gracious, anticipating your needs without ever breaking the spell. At the heart of it all is seafood of impeccable freshness, handled with bold, confident flavours that never shy away from making a statement. What lingers most, though, is the chef's technique, deft and inventive in ways I hadn't encountered before, marrying unexpected ingredients into combinations that surprise and delight in equal measure. A standout omakase, and one well worth seeking out. #sushikoji #seoul #korea
