Sigyeong Lamb Ribs (시경양갈비): A Masterclass in Authentic Chinese Cuisine Lamb hasn't always been common in Korea, but it has become a huge trend over the last decade. Sigyeong Lamb Ribs is undoubtedly the pinnacle of this trend. The main decor of the restaurant is the signature of Sung Si-kyung, a famous singer and YouTuber renowned for his sophisticated palate. As expected of a place "certified" by him, it more than lives up to the hype. This isn't your average Korean-adapted Chinese spot; it offers a truly authentic Chinese culinary experience. The lamb has absolutely no "gamey" odor and is of top-notch quality. What really stands out, though, is the chef’s mastery of the wok and frying techniques. Every dish feels like it came from a high-end kitchen. It’s located a bit outside central Seoul, but it is a "must-visit" if you appreciate real craftsmanship. Detailed Taste Test (that I tried) * Original Lamb Skewers: Features a bold, flavorful, and strong spice blend. * Korean-style Lamb Skewers: Marinated in a soy-based sauce. Personally, I found this even more delicious and well-balanced (b/c I'm Korean?). * Guo Bao Rou: Incredibly crispy pork with a slight tang on the outside. The texture and flavor are a fantastic combination. * Mapo Tofu: Intense, spicy, and deep flavors reminiscent of authentic Mala-tang broth. * Fried Eggplant: A total game-changer. The moment your teeth crunch through the crispy exterior, you get an explosion of soft, moist eggplant. It’s a texture I’ve never experienced elsewhere. * Eggplant Fried Rice: Every single grain of rice is perfectly fried and separated. It’s a high-end fried rice that shows off their wok skills. * Dumplings: The skin was a bit thick for my liking, which might be the traditional style, but it was the only slightly disappointing part of an otherwise perfect meal. Highly recommended for anyone looking for the best lamb and authentic Chinese dishes in the Seoul area.
