Jokbal (족발) is a traditional Korean dish made from pig's trotters braised in soy sauce and a blend of spices. Typically, it's slow-cooked in a mixture of soy sauce, ginger, garlic, and rice wine, with additional ingredients such as onion, leeks, cinnamon, and black pepper. The result is a rich, savory dish, with tender, flavorful meat that falls off the bone and has a beautiful, glossy finish. Despite its indulgence, I thoroughly enjoyed it! Another standout was the crispy Korean pancake, perfectly pan-fried to a golden exterior while keeping the leeks and vegetables inside moist. Dipping it into the special sauce elevated the taste even further. I also loved the kimchi bibim guksu, a spicy cold noodle dish made with thin wheat noodles called somyeon, which come in two slightly different thicknesses. The dish is simple yet flavorful, with kimchi as the star ingredient. You can also add vegetables like cucumbers or lettuce if you want a little extra freshness. All of this pairs wonderfully with makgeolli, a traditional Korean rice wine. The best part is that this stall, located in the heart of Gangnam, is surprisingly affordable, making it a great spot for a quick and satisfying meal! Highly recommended!
