While people often chase only the weight of decades-old traditions when it comes to Pyongyang Naengmyeon, this modest eatery pleasantly lowers that threshold with refreshing honesty and rock-solid fundamentals. The naengmyeon here leaves a profound impression from the very first sip of the broth. Embracing the signature, delicate 'seum-seum' (subtle and clean) minimalist flavor profile of authentic Pyongyang style, it nevertheless delivers a beautifully pronounced, deep savory meat aroma that gently blankets the palate.
