On 6.5 – Creative Kimchi Fine Dining in a Hanok Named after the ideal fermentation temperature (6.5°C), this restaurant elevates kimchi from side dish to star. Located near Anguk Station, the space blends traditional Korean tiled roofs with modern glass and warm lighting, creating a cozy yet stylish vibe. The service is exceptional, inspired by Joseon-era royal banquets—guests are welcomed with a traditional drink upon arrival, and staff explain each dish in fluent English. We tried nearly the entire menu with five people. Standouts include the signature Fried Kimchi (crispy nori-wrapped kimchi with refreshing radish cream), Mushroom Steak (juicy with aged kimchi and tofu cream), and the show-stopping Galbi with Bossam kimchi. The Uni Noodle and Sticky Rice Donut (filled with cheese and aged kimchi powder) also impressed. As a dining bar, each table must order one bottle (wine or non-alcoholic sparkling). The sommelier offers great pairings—try their exclusive white wine with perilla oil. A must-visit for creative, beautifully plated Korean cuisine. Reservations essential.
