Samgyetang is a traditional Korean chicken soup, especially enjoyed during the hot summer months to restore energy and improve stamina. It is made by stuffing a young whole chicken with glutinous rice, ginseng, garlic, jujubes (Korean dates), and chestnuts, then slowly simmering it until the meat becomes tender and the broth turns rich and milky. If you are a foreigner and never experienced with this soup, it is better to know the followings. • The chicken is served whole, including the head and bones, which can feel unfamiliar or awkward to eat. • There are many small bones, so it requires careful eating. • The soup is lightly seasoned, which some may find bland at first. • The strong, earthy flavor of ginseng can be unusual for those not used to herbal tastes. • It is often eaten very hot, both in temperature and portion size, which can be challenging.
