Tonshou Gwangan was absolutely worth the wait. Even after waiting nearly two hours, the quality of the food made it completely worthwhile. The pork cutlet was incredibly tender and juicy, with a perfectly crispy coating that stayed light and crunchy until the last bite. You can immediately tell how much care goes into the preparation. The meat was exceptionally soft and flavorful, easily one of the best tonkatsu experiences I've had. Every part of the meal, from the sides to the sauces, was well executed. If you're visiting Busan and wondering whether the long line is justified, the answer is yes. The wait can be long, but the food more than delivers. I must say that as a lover of tonkatsu who has lived in Japan on and off for over forty years I entered as a curious skeptic. Through the local app used by my wife we learned that a customer waiting in line/online like we did yesterday—a weekday—signed on remotely at 11:AM opening time but was not seated until 8PM. We ourselves gave up and then came back the following day to physically stood in line from 9:30 to 11:00 in order to be assigned a number. Nowthe food. The pork itself was truly excellent, as good as any I’ve had over these forty-plus years of eating tonkatsu. However, the breading, the salad and salad dressing, the condiments and the rice all suffered by comparison with the best places I’ve eaten, as did the miso soup which would have been good if they hadn’t added spicy chili flakes—which for me, even though I’m a spice lover, absolutely kill the delicacy and complexity of a good miso soup. None of them were really bad, though the salad dressing was a truly disappointing, overly sweet and shallow flavor which distracted from my enjoyment of both the cabbage and the main dish itself. We enjoyed our meal because of the meat quality but certainly not enough to ever repeat such a wait food that ultimately didn’t even merit a five star rating. My overall rating, by the way, is awarded simply on the basis of the food and the experience upon entering. If I were to factor in the difficulty of reserving and the inconvenience of the wait? I made a reservation through Catchtable, prepaid in full, and even completed our menu selection in advance. We arrived exactly on time at 10:50 AM, only to be told that our reservation was “not confirmed” because we are international guests, and that we needed to wait an additional 20 minutes. This is completely unacceptable. You cannot take full payment upfront and then claim the reservation is not confirmed. If confirmation is required, that should be handled before charging customers — not after they arrive. This treatment feels discriminatory and extremely unprofessional. It appears that the restaurant overbooks or mishandles reservations, then shifts the inconvenience onto paying customers — especially foreigners.
