Panax (파낙스) in Yeouido: A Masterclass in Traditional Samgyetang Samgyetang (Ginseng Chicken Soup) is a quintessential Korean health food, and Panax serves a version that stays true to the fundamentals. Doing the basics perfectly is often the hardest task, but this place nails it. *The Experience The meal begins with classic Kimchi and Kkakdugi (radish kimchi). You will also be served a small glass of yellow liquor. My advice? Save it for the end of your meal. When the dish arrives, don't be surprised by its appearance—it’s a whole chicken served in a boiling stone pot with no separate bowl of rice. But as you carefully start eating, you’ll find the inside is stuffed with glutinous rice, ginseng, jujubes, and chestnuts. It’s a similar concept to American turkey stuffing! The broth is clean, light, and remarkably deep in flavor. *A Note on Ginseng ** The Ginseng Root: You’ll find a whole ginseng root inside. It has a distinct bitterness, but since you're in Korea, it’s worth trying for its medicinal benefits! ** The Yellow Liquor (Insam-ju): Be careful with this—it’s Ginseng Wine. If you aren't used to strong herbal spirits, the flavor can be quite intense and challenging. Verdict: If you want an authentic, no-frills, soul-warming bowl of Samgyetang in Yeouido, this is the place. It’s simple, traditional, and executed flawlessly.
