Polin Coffee — A Hidden Yet Refined Roastery in Iwol-myeon, Jincheon, South Korea Polin Coffee is the kind of café that makes you wonder: “Why is a place like this located here?” Yet the moment you step inside, the question turns into appreciation. This roastery uses the Loring S7, a high-end roasting machine made in the United States using hot air roasting technology. The quality of the beans and the balance of flavor reflect the capability of this machine and the roaster’s knowledge. The yard is wide and peaceful, reflecting the owner’s generosity and character. On weekends, dogs sometimes visit and freely run around — creating a warm and welcoming scene. The name Polin means “Here you will rest.” Its origin is from Hebrew and even appears in Scripture — a fitting meaning for a place designed for rest. The café sells roasted beans and drip bags, offering plenty to explore and purchase. Whenever I’m near Jincheon, I always stop by. Their espresso alone proves the craftsmanship behind their coffee. Naturally, drinks like lattes and affogatos are just as exceptional. There may be many cafés around, but not many that truly know how to brew coffee well. Polin Coffee eliminates that concern — inviting you to slow down, relax, and focus only on the cup in front of you... and yourself.
