Premium coffee chain known for “lungo” and ice cream. South Korea’s coffee culture is famously fueled by a near-obsessive love for the iced Americano, but Paul Bassett bucks that trend. For over a decade, they have been pushing for their own distinct coffee culture centered entirely around the lungo and exceptional, specialized dairy. While it's listed on the menu as a lungo, the actual extraction technique is much closer to a ristretto. A shorter pull that forces less water through the grounds, which yields a sweeter, highly concentrated shot. It’s designed specifically to emphasize the bean's natural aromatics, and while the contrast isn’t drastic when ordered iced, the initial tasting notes here are more floral and nuanced than your typical watered-down espresso. Ice cream here is also really good. The brand is backed by one of Korea's major dairy conglomerates, and they source their milk straight from the highly regarded Sangha Farm. The regular milk ice cream was phenomenal. On par with the elite soft serves you'll find across Korea and Japan. Super rich and nutty profile without any of that sugary aftertaste. This location is on the 6th floor of the iPark Mall, so they might initially blend in with typical commercial coffee shops. But if you’re looking to break away from the standard Korean cafe routine and experience an elevated cup, I highly recommend giving them a try. I have been to many locations in various countries. The desserts have been exceptionally good. Unfortunately, that was not the case at this location. The Lavender ice cream tasted like vanilla with a lavender color. It was good, but not as good as many of the desserts I have had at their stores.
