인계동 라멘집 하나비라멘 우리나라에 상륙한 서양에서 유명한 일본 라멘 프렌차이즈. 서양인 입맛에 맞게 레시피가 만들어진 탓에 전반적으로 한국인 입맛에는 약간 덜 녹진하고 덜 짜다. 해결책은 주문 시점부터 타레와 아부라 추가를 요청하면 됨. 잘 배합한 결과물은 프렌차이즈 라멘집치고 고급의 맛을 자랑한다. 새로 완성된 라멘은 가성비가 좋으며 면 스프 토핑 다 나쁘지 않고 특히 수비드 차슈가 일품이며 반찬 유자단무지와의 궁합도 아주 좋음. 사장님과 직원분도 상당히 친절하심. The restaurant captures that authentic, cramped Japanese vibe, though there's more seating upstairs. I had the miso ramen with extra chashu. You can get free rice, but I skipped it. The flavour was okay overall, but the chashu was a letdown. I expected thick, well-marinated slices, but these were paper-thin and looked almost like undercooked bacons. I get that it might be their style, but it had a gamey smell that really didn't sit well with me. Also, the table hygiene needs some improvement. There was dried, sticky tonkotsu broth left on the table that got all over my jacket sleeve. The nice and friendly staff saved the place from being rated lower than 3 stars. Hello, thank you for your visit and for taking the time to share your detailed feedback. We truly appreciate your kind words about our atmosphere and staff. At the same time, we sincerely apologize for the parts that did not meet your expectations. Regarding the table you mentioned, it was not due to poor cleaning. The wooden surface had an issue with the coating lifting slightly, which may have appeared like dried residue. However, it was not actually sticky or transferring onto clothing. We have since re-sanded the tables and carefully reapplied the coating, and we are continuing to monitor and improve this. As for the chashu, we understand your expectations. Our style focuses on a lighter texture rather than thick cuts, and we appreciate your feedback on this. We truly appreciate your honest feedback, and we will keep working to provide a better experience.
