9番のsibnature Karamiso ramenを食す。美味しかった。辛味噌とあるが、辛いの苦手な人も食べられる辛さ。チャーシューはジューシータイプではないものの麺は日本のラーメン、スープも美味しい。5,6ドルという値段でこれだけ日本のラーメンに近いものが食べられたら満足だ。ランチは1ドルで唐揚げ3ピース付けられる。この唐揚げも美味しい。近くに居るなら是非試してみて。

Had a wonderful dining experience at En Ramen today! En Signature Ramen: Very well done! The noodles were springy, and the broth was flavourful and rich without being overly salty. You can taste the effort in every spoonful. Karaage (+$1.50 for 3pcs): A total delight. Served hot, crispy, and featured a unique, delicious hint of bonito. We had a quick chat with the lovely owners, Dennis and Hana. Such a delightful place—we are already looking forward to our next visit! Tried 4 ramens (listed by their number as per attached menu): 1. original tonkotsu 4. Shoyu 5. Signature (adds spicy minced pork) 6. Salmon bonito My rating: 2.5/5: average 5/5: a must-try TLDR: 4.25/5 Definitely value for money ramen The original was a tonkotsu soup, more towards the bland and watery side, but fairly clean and smooth to drink, you still get the milky emulsion expected. The shoyu is the tonkotsu soup undertone with a more salty taste. I personally prefer this as there is a bit more flavouring and body to the soup. The signature just adds spicy minced pork on top, this spice however really overpowers the base and you only just taste the spicy. The bonito soup with fried salmon is just a simple clear soup for those not interested in the pork options, not to my taste. The soya sauce had the wasabi taste to it so i found that interesting. I have to say that they managed to nail the slow cook of the char siew, the right choice of cut, and the thickness. It was a joy to eat it. The noodles for all bowls are the white kind, it is generally a softer texture with not much chewiness or springiness if you are looking for that, but i cant tell whether it is due to noodle type or duration of cook. The egg was well seasoned and cooked perfectly, kept warm as well. They dont skimp on the bamboo shoots and black fungus also. The kaarage was honestly not bad, it was proper hot chicken meat and not the undercooked floury processed nonsense some restaurants give you. Finally, although i find the noodle portion was a bit small, the value proposition is still very good for ramen, i recommend going for the $1.5 kaarage for some protein and to be more full. Overall, it is very amazing as a neighborhood ramen set for under $10, i see myself coming back. Meal type: Dinner Price per person: $1–10 Food: 5 Service: 5 Atmosphere: 4
