Flagship on Ship Street offers East-meets-West cuisine, mixing Western classics with Chinese ingredients in particular. Pan-seared Octopus. Freshly seared octopus tentacles with smoky salmon roe and crunchy kale tossed in a sweet and appetizing Patchun sweet vinegar. Slightly tender and meaty octopus. 31 Days Dry Aged Pork. A thick piece of lean pork tomahawk. Great for sharing. Served with grilled whole garlic and veggies. Carbonara Chinese Style. Traditional carbonara with no cream that solely relied on egg yolk and cheese to make it so luscious, with fragrant Chinese cured pork and briny Jinhua ham replacing guanciale.
