Johnson You Tiao, Kallang Old Estate Market: Still on a bender for local great eats such as Johnson You Tiao which really hasn’t changed much through decades. This is in my hood - bursting with Bib Gourmand winners, unsung heroes such as the elderly couple who still hand make the you tiao (fried fritters). There’s a length of table top for the dough kneading and fresh prep. You will smell the lovely fragrance a mile away and when you do sink your teeth in, it’s crunchy and perfectly textured thanks to great workmanship and high heat. The wife is rather grumpy but if you do coddle her a little, she’s a sweetheart. They start early and close when the batches are sold out.
