【漢南洞】隠れ家絶品広東料理の名店「Jué（쥬에）」 漢南洞にある広東料理の名店「Jué（쥬에）」にお邪魔してきました。北京ダックに海鮮フカヒレ餡掛けが絶品！食べる場所によって味の変化が楽しめる三味春巻きに鮑とトリュフ、キャビアの焼売も美味しかったです。 〆は炒飯か担々麺か選べたので担々麺に。個室の備え付けレストルームで使われているアメニティの香りが良くどこで購入できるのか尋ねたところ、サンプルセットをプレゼントしていただけました。素敵なお店ですね。. Food: 5 Service: 5 Atmosphere: 5

Jue presents itself with quiet authority. An elegant interpretation of Cantonese cuisine, where tradition is framed through a refined, almost ceremonial lens. Even without a reservation, the reception was gracious, a gesture that set a positive tone from the outset. Dining alone in a setting that naturally lends itself to sharing can feel slightly at odds with the rhythm of the cuisine. Cantonese food, at its best, is communal. Very much built around variety and exchange. Still, the experience holds its own. Three baskets of dim sum, each with three pieces, offered a well-executed glimpse into the kitchen’s precision: delicate wrappers, balanced fillings, and a clear respect for technique. It is thoughtful, composed cooking perhaps not surprising given its mentions by Michelin and 50 best. The setting is polished and calm, service attentive and well-intentioned. Yet there are moments where the experience loses some of its finesse. The by-the-glass wine selection feels notably limited, particularly for a restaurant operating at this level. And while the staff’s attentiveness is genuine, it occasionally crosses into over-assumption: subtle gestures, such as preemptively offering cutlery, risk breaking the sense of ease for a guest who would prefer to engage with the meal in a more traditional way. These are not fundamental flaws, but they do shape the overall impression. Jue delivers where it matters most: on the plate and in atmosphere, yet leaves a sense that the final layer of refinement lies in reading the guest just as carefully as the cuisine itself.
