If you think you’ve already had a good bowl of tonkotsu ramen, this place might just change your mind. At Kamitora Tonkotsu Ramen, the focus is entirely on the broth, and it shows. The tonkotsu soup is rich, creamy and packed with depth after hours of simmering, yet it never feels overwhelmingly heavy or salty. It is the sort of broth you find yourself finishing to the very last drop. The signature Kamitora Ramen Special is worth ordering. It comes with tender slices of chashu, handmade pork meatballs and a thick slab of beautifully seared pork belly that practically melts in your mouth. The noodles have a great bite and hold up well against the intensely flavoured broth, while toppings like wood ear mushrooms and spring onions add texture without distracting from the star of the bowl. The restaurant itself is compact, lively and unmistakably Japanese. There is often a queue during peak hours, but the turnover is fairly quick and the wait is well justified. In a city with no shortage of excellent ramen, this is one that genuinely stands out. Rich without being cloying, comforting without feeling predictable.
