TL:DR amazing coffee with amazing and humble service. It’s like going for coffee at a friends place - very welcoming to newer coffee drinkers/enthusiasts, and worth the attention of serious coffee professionals. Shu was supposed to be the first stop of many on one of my coffee outings, but ended up being the only stop I went to. Having met the owner before I came my expectations where set relatively low: I wasn’t sold on the experience I ended up getting. I ordered they house white (akin to a standard cappuccino in size and foaming) and ended up getting an espresso as well. Both where excellent despite their unorthodox approach to coffee. Both coffees where a Brazilian bean with a 21g dose and a 30g yield: a very unique 1:1.42 ratio with surprising results. The espresso was smooth and sweet. The acids had a pleasant presence on the tongue and in aroma, and the bitterness was practically non-present. A mixture of low extraction over a standard pull time with a deeper than normal coffee puck made one of my most memorable coffee experiences in Hong Kong. The milk was textured to near perfection - I was gifted a second milk drink due to knowing the owner, where their more experienced Barista, Mark, steamed what I would consider a perfect milk for a cafe. I have no criticism on the quality of the roast nor the choice of espresso style. In fact I praise it for being uniquely honest and unquestionably *itself*. It can be easy to judge it as “not real espresso” but if not following the rules creates better coffee, then more people should discard the rules. Shu is a place I plan on returning to again and telling people about. So far it is on my top 5 coffee spots in Hong Kong. If you are in the area it is definitely worth a visit. In their own words they “don’t serve specialty coffee”, but I vehemently disagree. The care they have for their service and their coffee is definitely something special. I recommend the Honey Oat and Coconut Black. House black is fruity so depends on your liking. They roast their own beans. Barista was friendly and professional in preparing the coffee. The place has a cool vibe. Grey cement and brick. Food: 4 Service: 5 Atmosphere: 5 Order type: Takeaway Meal type: Other Price per person: $50–100
