Not local but beef brisket noodle soup is on my must-do list when visiting HK. Shui Kee is famous for its time honored flavors and old school street stall seatings. So I’m glad we’re able to give this place a try. We went during lunch hour on a weekday and as expected there was a line, but it moved very quickly as everything was so efficient. We ordered several noodle soups with variety of proteins including brisket, fish balls, and organ meats (intestines, stomach, etc.) The broth is exceptional - it’s clear yet complex and umami, with a slight sweetness. All the meats are super flavorful and melt in your mouth tender, even for the offals. I personally prefer wide rice noodles to go along with the broth. They soak up so much broth and have a satisfying silky texture. It’s been a month and I’m still thinking about that bowl of noodle soup There are two lines - dine in and takeout, so make sure you wait for the right line. Cash only.
