What a cool little hidden gem, one of the locals told me to go to Hart Street, and I found this gem . Food was authentic and delicious. I was looked after the amazing Jujang who recommended me the steak Wagyu if you are in the TST area and looking for something to try, this is it! Rating:. Despite the Michelin Guide recognition, my experience at Siaw was underwhelming. While the venue is polished, the culinary execution leaned heavily toward a localized fusion rather than authentic Thai profiles. Culinary Evaluation • Kurobuta Pork Boat Noodles: While the quality of the Kurobuta pork was acceptable, the broth—the soul of this dish—lacked the traditional depth, richness, and complexity of blood-thickened spice typically found in authentic versions. It felt significantly "tamed" for the Hong Kong palate. • Spicy Beef with Flat Noodles: The texture of the noodles was adequate, but the flavor profile was safe and unremarkable. The expected Wok Hei and the vibrant balance of Thai chili and basil were noticeably muted. Final Verdict. The meal was "normal" at best. It lacks the technical mastery of spice and aromatic layering required to justify its accolades. If you are seeking a truly authentic, uncompromising Thai flavor profile, this establishment may feel too catered toward local fusion tastes. Not a repeat for us.
