The Fat Sparrow presents a polished take on Modern Australian cuisine, thoughtfully accented with Asian influences. Beginning with well-executed starters such as the Aburi Salmon, where lightly torched kombu-cured salmon is paired with umami-rich nori and a bright yuzu ponzu granita. The Artichoke Soup delivers comfort, its velvety base enriched by brown butter, toasted almonds and crisp carrot chips. A highlight among the mains is the Octopus Malfadine - tender Fremantle octopus paired with malfadine pasta in an XO-infused tomato cream, lifted by chorizo, fried basil and fresh sprouts. The Honey Glazed USDA Pork offers a refined balance of sweetness and savoury depth, complemented by charred cabbage, apple-mint salsa and a robust mustard red wine sauce. Dessert concludes with complimentary Matcha Nori, where matcha gelato, black sesame sauce, mochi and puffed rice cracker deliver a composed interplay of earthy sweetness and texture.
