The Sukiyaki set was fire—beef was great, and the deep-fried tofu soaked up all that tasty soup. Totally hit the spot. My colleague loved the tomato shrimp bisque, and the grass carp was super fresh since the owner gets it from the market daily. Quick service and good portions. I'll be back for sure! I recently dined at a Japanese hotpot restaurant that left a lasting impression — warm, authentic, and thoughtfully executed from start to finish. Flaming Clam Soup Set Meal * Presentation and aroma: The Flaming Clam Soup arrived with an immediate lift of fragrant steam. It’s theatrical without being gimmicky — the visual drama complements the delicate seafood fragrance rather than overpowering it. * Taste and balance: The broth was clean and mineral-bright, carrying a lovely sweetness from the clams. Each spoonful felt fresh and restorative, with umami that built gradually rather than hitting you all at once. * Ingredients and texture: The clams were tender and sweet, with just the right bite. Accompaniments (greens, mushrooms) absorbed the broth beautifully, making every piece sing in partnership with the soup. Sukiyaki Set Meal with Miyazaki Beef Oyster Blade * Beef quality: The Miyazaki beef oyster blade was outstanding — deeply marbled, silky, and richly beefy. Sliced to allow quick cooking, it retained a luxurious, melt-in-your-mouth texture while still offering a satisfyingly beef-forward flavor. * Sukiyaki sauce and harmony: The sweet-savory sukiyaki tare was spot on: not overly saccharine, with balanced soy and mirin notes that highlighted rather than masked the beef’s natural depth. Dipping a perfectly cooked slice into the lightly beaten raw egg was an indulgent touch that elevated the mouthfeel. * Accompaniments: Vegetables were thoughtfully prepared, soaking up the sukiyaki juices and acting as welcome textural contrasts to the unctuous beef. 千萬両聚寶雜炊 (Zosui/rice porridge) +$12 only * The 千萬両聚寶雜炊 is a comforting, soul-warming finale that transforms the remaining hotpot broth into a silky rice porridge. It’s the kind of dish that demonstrates respect for ingredients and zero waste — turning every drop of flavor into something soothing and layered. * The zosui was rich without being cloying, with rice grains tender and just slightly broken down to create a luscious, velvety body. * Service and professionalism — Roy Tse: A special note must be made for Roy, the professional staff member who prepared the 雜炊. Roy’s technique was impeccable: he timed the rice and broth with precision, and explained the ingredients and process with calm expertise. It was clear he understands the components intimately — which vegetables and proteins would best release umami, how to coax the ideal silkiness from the rice, and when to stop cooking for maximum texture. His care elevated the dish from merely good to memorable. Food: 5 Service: 5 Atmosphere: 5
