Formerly a private members' club, Jiangsu Club is now open to the public. Specialising in Huaiyang cuisine, the venue has invited Master Chef Shi from Hangzhou—renowned for cooking for dignitaries and celebrities—for a one-week guest chef residency starting next Monday. During this time, he will present a limited-time menu that innovates upon traditional dishes. The Suoyi Jade Melon showcases his exceptional knife skills, while the snow-white Cod Lion’s Head replaces traditional pork with tender fish for a lighter take. The chef has even brought his own sauces and mung bean sheets, a testament to his dedication. The Braised Boneless Fish Face with Fish Maw and Braised Turtle Rim with Black Garlic highlight his mastery through rich textures and balanced flavours. The feast culminates in the signature Hand-Shredded Crab Roe with Double Rice, where the roe is fragrant and rich, served in a perfectly judged portion. For those who prefer classic dishes, options include the crystal-clear Stir-Fried River Shrimp, the delicate Xiaolongbao, and the Crispy Spring Onion Chicken, which remains tender even in the breast. Two limited-time set menus will be available from 23 March to 30 April.
