Semi-drying is quite a challenge. It's impossible to dry all the fish at the same time. Each fish must be individually dried to maximize its unique characteristics. This restaurant, though located a short distance away, offers a beautifully presented table full of seafood. I drove three hours from Busan to get there, and it was worth it.
