One of few stalls that was still available around 7pm on a weekday. Soup was clean and light. Beef was surprisingly tender, easy to chew with a nice bite. Food: 5 Service: 5

I was at my favorite hawker centre, Amoy Street Food Centre, scouting for something new to try. That’s when I spotted a patron happily slurping down a bowl of beef noodles that looked absolutely mouthwatering. A quick look around and I found the source — a stall called Hainan Beef Noodle. Curious, I did a quick Google search to check reviews, but to my surprise, there was nothing at all — turns out it’s a brand new stall! Normally I wouldn’t take a chance on a just-opened place, but the beef noodles looked too promising to pass up. I went with the Five Spice Beef Brisket Bee Hoon ($7). When the bowl arrived, I was impressed — it was huge, with thick slices of beef brisket swimming in a glossy, dark sauce. Picked up a piece of brisket, took a bite, and wow! Tender, melt-in-the-mouth beef bursting with multi-dimensional flavors — rich, aromatic, and deeply satisfying. Every slice of brisket in the bowl was consistently delicious, and the sauce was thick, savory, and well-balanced — rich without being cloying or slimy. To top it off, the set came with a bowl of wonderfully fragrant herbal soup, which paired perfectly with the richness of the noodles. All in all, this was a hearty, generous, and incredibly tasty bowl of beef noodles. For a stall that’s been open less than a month, they’ve nailed it. A hidden gem in the making!
