Ichiran Taipei is one of the most recognizable ramen destinations in the city, bringing the famous Japanese chain's signature tonkotsu ramen and individual dining booths to Taiwan. The restaurant follows the same ordering system found in Japan, where you customize nearly every aspect of your bowl before sitting in a private booth designed to let you focus entirely on the food. It creates a unique experience that stands out from a typical ramen shop, especially for first-time visitors. The ramen is the main attraction, with the rich pork broth and thin noodles remaining the signature combination. I liked being able to customize everything from the richness of the broth to the firmness of the noodles, spice level, garlic, and other toppings to match my preferences. The broth was creamy and flavorful, although I found it slightly lighter than the version I had in Japan. Adding extras like the soft-boiled egg, additional pork, or extra noodles helps make the meal more filling, and the classic tonkotsu flavor is still satisfying. The individual booths are a big part of the experience. Each seat is separated by dividers, and your food is served through a small window in front of you, creating a quiet atmosphere where the focus stays on the ramen. Even though it is part of a large international chain, the setup still feels unique and makes dining here memorable, especially if you have never visited an ICHIRAN before. The biggest thing to plan for is the wait. This location is open 24 hours, but it is common to see long lines throughout the day and even late at night. Visiting during off-peak hours, such as late morning or very early in the day, can significantly reduce the wait. If you are visiting during dinner or after nightlife hours, expect to spend quite a bit of time in line before being seated. Overall, Ichiran delivers a fun and well-organized ramen experience that stays true to the brand. While I still slightly prefer the flavor of the locations in Japan, the customizable ramen, efficient service, and iconic private dining booths make this a worthwhile stop for both first-time visitors and fans of the chain. If you have never experienced ICHIRAN before, it is easy to see why it has become one of Taipei's most popular ramen destinations.
