Went for a friend’s birthday lunch today at a place in Tsim Sha Tsui (Teppanyaki HIBI)The food was incredibly fresh – no surprise there. I particularly loved the abalone and scallops, which came with a uniquely refreshing sauce, and the foie gras paired with fried dough sticks (youtiao) was a real highlight They also served small palate cleansers between courses – such a thoughtful touch that really lets you appreciate the flavours of each dish. You can tell they put a lot of care into the dining experience. Price per person: $500+ Food: 4 Service: 4 Atmosphere: 4

Dining at the newly opened Hibi in Ocean Terminal, my expectations were set for a premium teppanyaki experience. I sampled both the Lunch Teppanyaki Set (utilized the Foodie member exclusive rate of $198, a solid $70 discount from the $268 original price, but you need to download their app and register to become a ‘foodie’) and the Premium Teppanyaki Set ($398). Unfortunately, while the menu looked promising on paper, the execution was underwhelming across several key areas. The experience wasn't without merit. The South African Abalone was a definite standout, served hot with a pleasant, chewy texture that felt premium. Additionally, the Hiroshima Oysters were well-executed; the inclusion of miniature Sakura prawns provided a lovely, briny depth that elevated the dish. Regrettably, the meal struggled with fundamental issues regarding temperature control and flavor fusion. The Appetizers: The Plum Wine Tomato Jelly served at the start of both sets was unfortunately just average. Plating & Aesthetics: While the Tiger Prawn actually tasted better than it looked, the plating was quite basic, failing to convey the premium feel of the menu. Service & Temperature: A teppanyaki meal relies heavily on the "sizzling" factor, yet several dishes arrived lukewarm or at room temperature. The steamed egg with crab meat was particularly disappointing as it lacked the characteristic warmth one expects. Similarly, the seasonal vegetables and sprouts arrived at room temperature, with some bites even feeling cold, a complete departure from the spirit of teppanyaki. Flavor Profiles: The protein courses were the biggest letdown. The Crispy Okinawa Pork Roll presented like an uninspired mini-wrap and lacked the heat necessary for texture. The sliced US beef suffered from poor execution; despite being packed with garlic, the flavor and aroma failed to infuse into the meat, resulting in a disconnected culinary experience. While the Crab Fried Rice was passable, the overall meal felt like it was missing the "fire" that defines good teppanyaki. Given that the restaurant is newly opened, these issues may stem from initial teething problems. I sincerely hope the kitchen team can refine their timing and temperature management, as the potential is there, but the current delivery falls short of the mark.
