There’s something quietly reassuring about slipping into ROUCOU on Aberdeen Street. No grand signage, no fuss—just a warm glow, a welcoming bar, and the unmistakable scent of aged cheese hanging in the air. Recently, they celebrated their first anniversary with a low‑key but delightful collaboration: Singapore’s AMI Patisserie, helmed by la Liste’s 2025 Pastry Talent of the Year, Chef Makoto Arami. My friend and I grabbed seats at the front – the omakase counter at the back was fully booked, but honestly, the front room felt just right for an evening of leisurely grazing and good cocktails. The bites Chef Makoto’s Signature Caviar Choux (HK$188) is a clever nod to the Japanese egg sando – crisp choux pastry cradling a luxuriously creamy egg salad, topped with Oscietra caviar. It’s rich, savoury, and unexpectedly light. His Sakura Ebi Croquette (HK$98) – golden, crunchy, filled with sweet shrimp and a purée of Japanese mountain yam and broccoli purée – is the kind of refined bar snack you wish every place did. The kitchen’s own hits A Potato Millefeuille (HK$168) layers crisp potato slices with beef tartare and grated cheese – textural theatre that actually delivers. This is my must-order every time I come here. The Spicy Lasagna Dumpling (HK$168) wraps braised beef cheek and Saint‑Nectaire Fermier in a tender pasta pocket, with a runny egg yolk and shaved Parmesan – comforting, punchy, deeply satisfying. The cheese board, naturally You can’t come here and skip the cheese. The Jeremy Cheese Selection (HK$258 for five) is a thoughtful journey: a gentle goat’s cheese, a nutty 4‑year Comté, the soft, milky Abbaye de Tamié, and a bracing 2‑year‑aged Roquefort – still creamy, still defiantly blue. Paired with a sake cocktail, it’s the heart of the evening. Lighter moments Hamachi Carpaccio (HK$138) with daikon, herbal oil and a whisper of St. Félicien cheese dip is bright, clean, and cleverly balanced. And the Crêpe Suzette (HK$98) gets an inspired twist – Japanese brown cheese in the sauce, adding a gentle savoury note to the orange and caramel. Even the chicken karaage with Japanese curry rice (HK$138) – topped with generous shaving of Mimolette – feels thoughtful: crunchy, juicy, with just enough cheesy umami to make it memorable. The takeaway ROUCOU isn’t trying to shout. It’s a place where cheese is treated with genuine respect, where collaboration feels natural, and where you can actually have a conversation while eating very good food.
