We encourage tables to interact over the food, though we completely understand your point regarding trickier elements—like the seaweed on the pie—and how dividing those up can sometimes feel a bit cumbersome. While our portioning aims to offer a balanced flow throughout the multi-course experience, we hear you loud and clear that it felt a bit sparse for your group.As a culinary team, we prioritize the quality and standards of our dishes first and foremost. To maintain this, we review hundreds of comment cards every single week. This consistent feedback helps us fine-tune our recipes to satisfy the palates of both our internal team and our external guests. In doing so, we generally guide our menu adjustments using an 80/20 rule. Our goal is always to satisfy the majority based on collective feedback, while understanding that taste is deeply personal and we unfortunately cannot please everyone with every single flavour profile.For instance, our celery and wasabi ice is designed to be a sharp, unconventional palate cleanser. The same goes for the intense contrast in our dessert—while many guests enjoy that sharp sweet-and-sour juxtaposition, we realize it didn’t offer the enjoyable finish you were looking for.We are incredibly grateful for your constructive notes.
